Cranberry apple crisp


A blend of apples, cranberries and cinnamon are the base for this warm and colorful crisp from Cook Smart, Eat Well. A dollop of whipped cream is optional, perhaps depending on the time of day. Oats and fruit? Sounds like an acceptable breakfast to me.

Ingredients 

  • 6 cups Granny Smith apples, peeled and sliced
  • 2 cups fresh or frozen cranberries
  • ⅔ cup sugar
  • 3 tablespoons all-purpose flour
  • ½ teaspoon cinnamon

Topping:

  • 4 tablespoons unsalted butter, softened
  • ¾ cup all-purpose flour
  • 1 cup rolled oats
  • ½ cup ground flax
  • ⅓ cup brown sugar
  • ½ teaspoon cinnamon

Directions   

  1. Preheat oven to 350° F. Lightly grease a 9×13-inch baking pan with cooking spray. (You can also use an oven-safe pot)
  2. Place apples, cranberries, sugar, flour and cinnamon in a bowl and toss until evenly coated. 
  3. Spread the apple and cranberry mixture on the bottom of the pan.
  4. Mix the softened butter, flour, oats, flax, brown sugar and cinnamon in bowl until butter is well incorporated into the flour mixture, forming crumbles.
  5. Place the crumble mixture over the apples and cranberries.
  6. Bake 35-40 minutes.
