Food for Thought: Nearly 100 violations between this week’s low performers


LUBBOCK, Texas (KCBD) – From a well-known Mexican food restaurant – to a new and popular breakfast/brunch joint, our low performers have a combined nearly 100 violations.

But there is some good news as well.

Snooze, An AM eatery at 413 University 14 violations.

  • Raw sausage and raw chorizo were stored above ready-to-eat vegetables.
  • An open container of crab meat and ready-to-eat potatoes did not have an expiration date.
  • Other ready-to-eat potatoes were expired.
  • An employee washed their hands for only eight seconds. They must wash their hands for a minimum of 20 seconds.
  • An employee touched the ice of a customer’s beverage with their bare hands.
  • An employee used the sanitizer rag to clean utensils.
  • The sanitizing solution was not strong enough.
  • Sanitizing solution was stored on top of a cooler.
  • There is no thermometer in a reach-in cooler.

  • There was a gap in the rear door that could allow for the possible entry of pests.
  • Utensils were stored between reach-in coolers, exposing them to dust and other sources of possible contamination.
  • Dairy products were stored on the floor of the walk-in cooler.
  • Clean utensils were stored while they were still wet not allowing them to air dry.

The report shows most of the violations were corrected at the time of the inspection.

La Super at 2131 Clovis had 22 violations.

  • Raw eggs were stored above ready-to-eat salsa.
  • A container of food was sitting on top of an uncovered food container with the bottom of the top container touching the food.
  • An employee washed their hands for less than 20 seconds after eating.
  • An employee walked into the kitchen and did not wash their hands before putting on gloves.
  • An employee washed their hands in the three compartment sink.
  • There were no paper towels at a hand sink.
  • There were pots of food blocking a hand sink.
  • There were plastic containers in a hand sink. Hand sinks are for handwashing only to prevent cross contamination.
  • The rubber was torn and peeling on a pair of tongs.
  • A pot of cooked beans with stored under the fire extinguisher.
  • The facility prepares ceviche for sale without regulatory authority.

The inspector notes based on the number and the nature of the violations, proper food safety knowledge was not demonstrated.

  • An employee was eating in the kitchen area.
  • The handle of tongs was touching lettuce.
  • The handle of the ice scoop was touching ice.
  • A single use bowl was used as a sugar scoop.
  • Single use boxes were repurposed to store tamales.
  • Several containers of spices were not labeled.
  • The air conditioning unit above the three compartment sink was soiled with dust and dirt.
  • There was an accumulation of dust and dirt on the shelf used to store single service items.
  • The hand sink was not sealed to the wall.

The report shows most violations were corrected at the time of the inspection.

On the Border Mexican Grill at 6709 Slide had 23 violations

  • Cooked chicken was not at least 135 degrees.
  • The sanitizer solution for the dishwasher was at toxic levels.
  • A chemical spray was not labeled.
  • A chemical spray wand was on top of a box of disposable cups.
  • A hand wash sink was not plumbed correctly.
  • A lid was in a hand sink. Hand sinks are for handwashing only to prevent cross-contamination.
  • There were no test strips available for the sanitizer solution.

  • The back door does not close properly, allowing for the potential entry of pests.
  • Wet rags were on the prep table.
  • Bags of whole onions were on the floor.
  • Sealed bags of beef were thawing in a container of standing water.
  • Boxes of single use items were on the floor.
  • Cups were stacked while still wet. This does not allow them to dry.
  • A large vent above the clean dish rack had a heavy buildup of dust.
  • There was a missing cove base on the side of the cook line.
  • The cove base was separating from the wall throughout the facility.
  • Some of the ceiling tiles in the kitchen are not approved.
  • An employee’s jacket was on a clean dish rack.
  • The door to the walk-in cooler is damaged.
  • There are broken floor tiles on the cook line.
  • An employee’s water bottle was stored in the reach in cooler.
  • The plumbing for a sink near the dishwasher is leaking.

The report shows most of the violations were corrected at the time of the inspection.

Dreamers Bistro at 1003 University had 24 violations.

Dirty utensils were stored with clean utensils.

Dirty utensils were in the hand sink.

Employees used their bare hands to off the faucet at the hand sink. A paper towel must be used to prevent cross contamination.

  • Employees washed their hands in the three compartment sink.
  • The facility does not have an approved plan for the acidification of rice. This helps prevent bacteria from forming in rice used for sushi.
  • Ham, turkey and crab did not have a used by date.
  • There were no test strips available for the sanitizing solution.
  • Pesticides not approved for food service were used at the establishment.
  • The facility does not maintain required records for raw fish.
  • There was no certified food manager, or posting, at the establishment.
  • Employees have not successfully completed their food handler course.

  • An employee’s drink did not have a lid.
  • Single service items were on the floor in the dry storage.
  • The ice bucket was not inverted in between uses.
  • A single service item was used as a scoop in the powdered sugar.
  • Multiple items were not stored in their original container and were not labeled.
  • An employee cell phone was on a prep table.

The report shows most of the violations were corrected at the time of the inspection.

We’ve had multiple people reach out to us asking about the Red Zone Cafe on Slide Road. They were temporarily shut down last week after an inspection. That inspection was prompted by a customer’s complaint after seeing a rodent in the facility. We have requested those documents from the city. They have since been reopened after a re-inspection.
