Eleven Israeli companies and ForSea, which develops cultured eel using innovative technology that allows for the economical cultivation of seafood, garnered significant attention.

The eel market in Japan rolls over $4.5 billion annually and is steadily growing. The high demand naturally leads to a decline in the natural eel population, even to the point of severe endangerment.

Daniel Kolber, the economic attaché at the Economy Ministry and Industry in Japan, said, “Japan shares with our curiosity and innovation in various fields, and we are pleased to have the opportunity to challenge the Japanese with another product that is a real part of Japanese culinary culture.”
