Beloved New England gourmet grilled cheese brand opens first Mass. spot


Fans of Cheese Louise in Massachusetts will no longer need to travel out of state or wait for a festival to get the company’s popular gourmet grilled cheese sandwiches.

The beloved New England chain officially opened a permanent location at Hub Hall in Boston over Memorial Day weekend.

The fast-casual grilled cheese sensation is known for its artisan sandwiches including The Godmother (tomatoes, pesto, balsamic glaze and fresh mozzarella on sourdough), The Hot Potato (roasted potatoes, chive cream cheese, cheddar and Muenster on Sourdough) and The Blue Buffalo (buffalo chicken, sliced celery, blue cheese dressing, and muenster cheese on Sourdough).

The opening marks the first Cheese Louise in Massachusetts, joining the brand’s other spots in Portland, Maine and four New Hampshire locations.

“Cheese Louise is all about turning simple, nostalgic flavors into something extraordinary,” founder Bryce Harrison said in a press release. “We couldn’t be more excited to open at Hub Hall and introduce our cheesy creations to a whole new audience.”

Harrison founded Cheese Louise alongside his friends James Gaudreault and Ian Lubkin in North Conway, New Hampshire in 2018.

The company started as a food truck – and still operates with one today — before opening its first brick-and-mortar location.

“Our mission is to build the most people-focused restaurant company we can imagine, and to us that means cultivating a nurturing ‘team first’ culture within our company, supporting and engaging with our local communities, and providing our guests with a remarkable experience,” Cheese Louise’s website reads.

Located at 80 Causeway St., Boston, Cheese Louise is open starting at 11 a.m. every day. Hub Hall closes at 9 p.m. Monday through Thursday, 10 p.m. Friday through Saturday, and 8 p.m. on Sunday.
