‘Best case scenario’: Fayze’s bakery items return to shelves as People’s Food Co-op purchases brand, recipes


Fayze’s bakery items are again available on store shelves one month after Fayze’s served its last meal in what former owner Drew Williams calls “a best case scenario for us.”

People’s Food Co-op announced Friday it had purchased Fayze’s bakery lease, equipment and its recipes after the restaurant and bakery closed in early October. The bakery is already operational again, and Fayze’s bakery items are on the shelves at People’s Food Co-op in downtown La Crosse.

The baked goods will be made at the same bakery in the basement under the former Fayze’s restaurant. Jason Krautkramer, store manager at People’s Food Co-op, said the same sourdough starters Fayze’s used were kept alive during the bakery’s hiatus.

People’s Food Co-op rehired three former Fayze’s bakers to bring the popular baked goods back to shelves under a new roof.

“While purchasing a bakery was not on the co-op’s radar, we did have plans to upgrade some key aspects of our bakery,” said People’s Food Co-op CEO Lizzy Haywood. “This purchase gives us additional capacity for baking, and brings wonderful, knowledgeable and experienced bakery employees who formerly worked for Fayze’s and intimately know the recipes.”

Fayze’s, an iconic downtown restaurant, experienced difficulties shared by many small businesses during and following the COVID-19 pandemic. Unpredictable food prices and trouble maintaining a steady workforce led to the closure of the business.

“We are so pleased our former bakers are finding a new home at the co-op,” said Drew Williams, who had owned Fayze’s since 2008. “And it’s wonderful to know these recipes will continue to be enjoyed by Fayze’s fans in the La Crosse community, as well as by new customers.”
