
HONOLULU (HawaiiNewsNow) – Sometimes the best dishes are born from kitchen experiments and mistakes.
Da Hub Food Truck owner Kealoha Fernandez says that how he comes up with some of his innovative comfort food.
Fernandez showcased some of them on HNN’s Sunrise Weekends, including his deep-fried spam musubi, covered in a batter made from ‘modagee’ flour, a mixture of mochi and andagi mixture, traditionally used for sweeter desserts. After a mix up in recipes, Fernandez accidentally combined the two, creating what is now a best seller dish, topped with his fresh poke, secret spicy sauce and unagi sauce.
“A lot of my learning is actually from customers too,” Fernandez said.
Some of his recipes are co-created by customers who struggle to make up their minds while ordering. Fernandez is one of few cooks who doesn’t seem to mind indecisiveness as it only sparks more recipe ideas.
Other dishes Fernandez cooked up were his own poke omelet, smash burgers made of both ahi and beef. His latest addition to the menu is a half poke, half steak pizza called ‘The Chicago.’
Da Hub Food Truck was born after Fernandez began experimenting with poke out of his wholesale fresh fish shop in 2014. First branching off to offer unique poke flavors to the public, Kealoha later started offering poke dishes and hot food menu items from his kitchen and through pop-up events.
Now his business can be found at various events, including Pearlridge Center’s Village Night Market every Saturday from 5-9 p.m.
