BURTON, MI – A popular Mexican restaurant in Burton is expanding to a second location.
El Cozumel Mexican Grill, located in Courtland Center mall at 4190 E. Court St., will expand to the old Big Boy location in Davison Township.
The former Big Boy restaurant, 9497 Lapeer Road in Davison Township, permanently closed its doors over a year ago.
El Cozumel Mexican Grill has been a major staple in the Burton community since it opened in 2008.
“We have a lot of regulars from Davison and Lapeer,” said Saul “Lalo” Rodriguez, the restaurant’s owner. “It’s one of the main reasons we are expanding.”
There’s no timetable of when the expansion will be complete, Rodriguez added.
After eight years of Mexican cooking, Rodriguez moved to Burton from Indianapolis and, along with four financial partners, opened the restaurant 15 years ago.
The restaurant boasts a menu with appetizers, garden greens and tacos, along with quesadillas, enchiladas, and veggie plates.
Fajitas chicken, burritos, and seafood options are also available.
El Cozumel Mexican Grill is the Flint area’s most-reviewed Mexican restaurant on Google, generating over 2,000 reviews.
With a 4.5 Google rating, the customer reviews show this is a go-to spot where people can get their authentic Mexican cuisine and have a good time.
