Hotel restaurants are still shaking off the lingering, spectral stains of carveries, soggy crumbles and cold cheeses. These used to be gold-standard, guaranteed hotel restaurant fayre and we were too polite or daft to say anything about it. A day out is a day out and who are you to spoil it with your questions about the impenetrable boiled mutton and concrete white ice cream block.

Some are succeeding in creating clear blue water between historic horror and contemporary cooking.
