Thanksgiving leftovers edition: UF food science professor talks safety from foodborne illnesses


GAINESVILLE, Fla. (WCJB) -There are 6 days left till Thanksgiving and everyone loves leftovers. The University of Florida’s professor of food science Keith Schneider tells us how to minimize our chances of getting a food-borne illness when enjoying those leftovers.

Some ways to make sure leftovers are safe to eat are to ensure the food is cooked to a safe temperature and refrigerate the leftovers promptly. Not cooking food to a safe temperature and leaving food out at an unsafe temperature are the two main causes of foodborne illness.
