Great news! You don’t need to swear off meat to power up your plant intake. Beans are a really slick way of injecting more sustainable protein into your orbit, without having to forfeit meat altogether. Score! I like Simon Hill’s approach. Hill is a sports nut (short for nutritionist) whose cult-status book, The Proof is in the Plants (Penguin Random House), has transformed thousands of Australian shopping trolleys. Hill argues that increasing your intake of veggies and beans is like putting on your seatbelt while driving; it’s a means of protection against potentially avoidable health crises. Yup. It’s a precaution that will statistically reduce our chance of developing or dying from a lifestyle disease, while leaving us full of energy along the way. If there was a pill promising the same, you’d take it, right? That pill is plant-powered, and comes in the form of beans and veggies. Here’s a cinchy recipe to get started. Add it into stews, on top of curries, pepper into conversations, wrapped into rolls, or simply straight up with a fried egg and dollop of garlic yoghurt.
