Healthy Recipe: Pumpkin Roasted Chickpeas

Pumpkin Roasted Chickpeas — makes 8 servings

Ingredients:
• 1 (15.5 ounce) can of chickpeas, drained and rinsed
• 1/3 cup of pumpkin
• 2 tablespoons of maple syrup
• 1 teaspoon of cinnamon
• 1 teaspoon of pumpkin pie spice

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine all ingredients, mixing well.
  3. Spread chickpeas on a sprayed baking sheet and bake for about 45 minutes,
    stirring every 10 minutes.
